The Jean-Marc Boillot estate
Jean-Marc Boillot set up in 1985, having previously vinified for Olivier Leflaive Frères. He started out by renting a few plots from Pommardwhich he has extended with vineyards in Pommard and Volnay inherited from his father's side in 1988 (thanks to his other grandfather Étienne Sauzet), representing a third of the total estate. Étienne Sauzet estate. The domaine now cultivates 11 hectares of vines - 5 for reds and 6 for whites (including generic Burgundy) - and produces the same quantities of whites as a négociant, notably in the Côte Chalonnaise. Jean-Marc Boillot now works with his two children, Lydie and Benjamin.
Domaine Boillot wines
All the white wines, with the exception of the Grand Cru, are vinified in the same way: whole bunches are pressed, decanted for 24 hours, then racked into 25 to 30 % new barrels, stirred once a week, and bottled before the harvest. The result is fresh, seductive and pure wines.
The reds are completely destemmed, then undergo cold prefermentary maceration. Once fermentation has begun, they are racked and pumped over at a rate that takes into account terroir and vintage. They then spend thirteen months maturing in barrels, 50% of new barrels, and a final six months in stainless steel tanks to prepare for bottling. The estate's red wines combine fruitiness and woodiness brilliantly, a good combination for medium-term cellaring.

Montagny 1er cru
Readers looking for a delicious white from Burgundy should check out Jean-Marc Boillot's fabulous 2014 Montagny. Notes of flowers, pears, flint and crushed stone emerge from this superb white. A pure crystalline finish rounds things out.
Saint-Aubin 1er cru
From a rarely seen premier cru situated high on the hill overlooking the small Gamay village, Saint Aubin Sous la Roche Dumay (blanc) 2003 reveals a nose of sweet, buttery almonds. This suave, light to medium-bodied wine is spicy, filled with full-bodied pears, and offers a sappy, fleshy character and a long, expressive finish.
Pommard
Notes of rhubarb and redcurrants, this wine offers great freshness. Refined, very light tannins. A subtle finish.
Pommard 1 er cru Saucilles
The Pommard 1er Cru Saucilles is quite tannic, but very soft, with notes of ripe fruit. Medium-bodied.
Pommard 1er cru Jarollières
The average age of the vines is seventy years, giving birth to a wine that combines the roughness of Pommard with the finesse of Volnay. The tannins here are softer than in the Rugiens, giving this rich, full-bodied wine a long finish.
Pommard 1er cru Rugiens
Less energy than the Jarollieres. However, this is a wine that excels in texture, with refined tannins and a savory finish. Notes of licorice, fresh fruit juice and beef.
Puligny-Montrachet 1er cru Referts
Visit Puligny Montrachet 1er Cru les Referts develops like a great wine. It has a strict, linear nose, with mineral scents that develop well in the glass. The palate is well-balanced, quite powerful from the start with lemon zest, ginger notes and a very pleasant saline note, which demands another sip on the finish. An intense, classy wine.
Puligny-Montrachet 1er cru Champs Canet
The wine has a minerality reminiscent of its stony terroir. There's no lack of substance, but it's more linear than in the rounder, more supple Combettes. Despite this, the finish is long and persistent.
